Chef's Choice:   Fillet Bismark
A dish originally created in honour of Admiral Bismark of the Imperial German Navy.




Chef's Choice - Fillet Bismark

Ingredients

1 Fillet Steak - cut from the tournedos of the fillet
Mushrooms
Thick slices of Boiled Ham

Sauce

30g ( 1 oz.) Finely chopped Onions
30g ( 1 oz.) Butter
250ml ( 1/2 PT) Sour Cream
Juice of 1/2 a Lemon
15ml Spoon ( 1 Tablespoon) Mushroom Ketchup or Essence


Method

Make slits in the Steak and stuff with the Ham and Mushrooms, then cook the Steak to your liking.

To prepare the sauce:

First fry the Onions to a golden colour in the Butter.  Then add the Cream and reduce by half.  When reduced, add the Mushroom Ketchup and the Lemon Juice.  Season the sauce to taste.

Just before serving, add a knob of Butter and whisk in ( this adds a lovely sheen to the sauce), then pour over the cooked Fillet Steak.( Do not strain the sauce).  Enjoy!
