Method
Make slits in the Steak and stuff with the
Ham and Mushrooms, then cook the Steak to your liking.
To prepare the sauce:
First fry the Onions to a golden colour in
the Butter. Then add the Cream and reduce by half. When reduced,
add the Mushroom Ketchup and the Lemon Juice. Season the sauce to
taste.
Just before serving, add a knob of Butter
and whisk in ( this adds a lovely sheen to the sauce), then pour over the
cooked Fillet Steak.( Do not strain the sauce). Enjoy!
